Let's start this off right: STEW!!!
If you are anywhere near Nashville you owe it to yourself to have lunch at Vinh-Long. It's the very definition of hole-in-the-wall and it is amazing.
Plan on arriving early if you want a table quickly and make sure you have cash, as they don't accept anything else.
Once you've sat down at one of the eight or nine tables in the place don't bother with the menu, just order STEW, not Pho or anything else, just Stew. You can get small, medium or large, I would recommend medium unless you are super hungry. I've never had anything else like it and if you go and don't try it then you've failed at lunch. It's that simple.

Absolutely disappointing experience at lunch. The waiter mentioned all Pho are beef based (not even seafood soup) , so that option was out. Asked for Fish based entre and I was routed to Japanese menu. Ordered Teriyaki Salmon. The waiter mentioned she can substitute soup - that has chicken - by fried rice. When entre arrived, no fried rice, just white rice. She told me that they don't make Fried rice for lunch ;-)
The Teriyaki Salmon itself was very dry and had only strong teriyaki (sweet) taste. Asked for hot sauce, and they pointed to store-bought Sriracha. Very mediocre food and taste.

I'd say this place is super authentic (I am not Vietnamese, but have been to Vietnam once...). The food was amazing, a little salty for my taste but everything was great. My boyfriend thought the pork was on the tougher side but I didn't mind. It gets crowded around 11am on the weekends so get there early if you can!

It was cool finding a Vietnamese restaurant out here in Nashville. It is located in a strip mall with a huge parking lot. Parking will never be an issue.
The employees were very friendly when I entered and made sure that I got a seat right away. They have a nice menu with all kinds of different Vietnamese and Chinese food items. Interestingly enough, their menu included some Japanese cuisine items as well.
I ordered a Medium Regular Bowl pho and it was a nice-sized portion. I'm glad I didn't get the large because I wouldn't have finished it. It comes with tripe, tendon, flank, meatballs, and eye of round. I really liked the broth. With pho, it's all about the broth. If it's not good, then the rest of the stuff in the broth will not be good. I could have had this broth on its own without any seasonings. They were generous in the ingredients and I definitely did not have any complaints.
If my travels take me back to Nashville, I will definitely come back here.
